Description

Sugar Free Banana Bread is a soft, moist loaf made with ripe bananas, Greek yogurt, eggs, and self-rising flour. It contains no refined sugar and works well for breakfast, snacks, or a light dessert.


Ingredients

2 large ripe bananas

2 large eggs

1/3 cup melted butter or olive oil, 80 g

1/2 cup plain Greek yogurt, 120 g

1 1/2 cups self-rising flour, 225 g

1 teaspoon vanilla extract, optional

1 heaping tablespoon honey, optional

1/3 cup chocolate chips, optional


Instructions

1. Preheat the oven to 350°F or 170°C.

2. Grease a 9 x 5-inch loaf pan or line it with parchment paper.

3. Place the ripe bananas in a large mixing bowl and mash them until mostly smooth.

4. Add the eggs, melted butter or olive oil, Greek yogurt, and optional vanilla extract.

5. Whisk the wet ingredients until evenly combined.

6. Stir in the optional honey if you prefer additional sweetness.

7. Fold the self-rising flour into the wet mixture just until no dry streaks remain.

8. Gently fold in the optional chocolate chips.

9. Pour the batter into the prepared loaf pan and smooth the top.

10. Add a few extra chocolate chips on top if desired.

11. Bake for 60 to 75 minutes, or until a toothpick inserted into the center comes out clean.

12. Cool the loaf in the pan for 10 to 15 minutes.

13. Transfer the bread to a wire rack and let it cool completely before slicing.

Notes

Use very ripe bananas with plenty of brown spots for the best natural sweetness.

Do not overmix the batter after adding the flour, since too much mixing can make the loaf dense.

If the top browns too quickly, loosely cover the pan with foil during the remaining baking time.

For a gluten-free version, use a gluten-free self-rising flour blend.

You can also use gluten-free all-purpose flour with 2 teaspoons baking powder and 1/4 teaspoon salt.

Make sure all ingredients are certified gluten-free when needed.

Store the cooled loaf in an airtight container at room temperature for up to 3 days.

Refrigerate for up to 1 week.

Freeze the whole loaf or individual slices for up to 3 months.
