Ultimate Chipotle Bowls (Copycat Recipe) made with smoky chicken, cilantro lime rice, black beans, fresh toppings, and flavorful honey vinaigrette.
Ingredients
1.5 lbs boneless skinless chicken thighs
3 tbsp olive oil
2 to 3 chipotle peppers in adobo
1 tbsp adobo sauce
4 garlic cloves
1 tsp cumin
1 tsp oregano
1/2 tsp smoked paprika
1 lime
1 cup white rice
2 cups water or broth
1/2 cup cilantro
1 can black beans
1 cup corn
Romaine lettuce
Monterey Jack cheese
Sour cream
Avocado
Instructions
1. Combine marinade ingredients and coat chicken pieces
2. Cook cilantro lime rice until fluffy
3. Prepare pico de gallo in a small bowl
4. Shake together honey vinaigrette ingredients
5. Cook marinated chicken in a hot skillet
6. Assemble bowls with toppings and dressing
